Stuffed Sweet Potatoes with Mango-Black Bean Salsa

4-6 medium-large sweet potatoes
2 medium mangoes
1 can black beans, drained and rinsed
1 small green pepper
1/2 red onion
1 Tbsp. lime juice
1 tsp. ground cumin
1/2 tsp. ground cinnamon
1 tsp. brown sugar
Pinch or two of salt


  1. Preheat oven to 350°F.
  2. Slit the unpeeled sweet potatoes. Place in baking dish and add ¼ inch water. Cover with foil and bake for 45 min – 1 hour.


  1. Chop green pepper and red onion. Cube the mango.
  2. Toss mango, green peppers, red onion, and drained black beans in a mixing bowl.
  3. Sprinkle with lime juice, cumin, cinnamon and salt. Mix gently.
  4. Once potatoes are ready, let them cool for 10 minutes, open, and smash the inside. Leave the peel on.
  5. Add brown sugar
  6. Top with the mango-black bean salsa.
  7. Serve warm.
